Build-Your-Own Taco Bowl
Our lead Registered Dietitian, Sam, recommends building your snap hacks to include protein, veggies & healthy fat, since the combination of fat, fiber, and protein keeps you full throughout your workday.
Ingredients-
- Ground beef side (could also sub in our Components chicken thigh, Components chicken breast or other protein of your choice)
- Components coconut rice
- Components roasted zucchini & squash
- If you’ve got it from home, put these on a bed of romaine & add some cheddar cheese or guacamole (or both!)
The beauty of this recipe is that you can mix-and-match based on your preferences and what you have on hand. No tomatoes? No problem. Want more mushrooms in your life? Easy peasy.
No matter what, the end result is absolutely delicious. If you’re trying to eat low carb, omit the rice. If you don’t eat meat, pile on extra veggies and healthy fat (like guacamole) instead.
