Our Favorite Corn on the Cob Recipes

July 2, 2021

Hands down, one of the best summer staples out there is corn on the cob, and we are here to give it its moment! We’ve rounded up some of our favorite grilled corn recipes, as well as its health benefits, so you can savor every golden morsel this summer!

Health Benefits of Corn

Corn on the cob isn’t just a great-tasting summer food, it’s also a healthy choice. Corn is a great source of fiber, which helps with digestion, keeps you more full in between meals, and can lower the risk of colon cancer. Corn is also packed with whole grains, which makes it a great alternative to foods that contain processed white flour. Eating more whole grains can help decrease the risk of heart disease, stroke, cancer, type 2 diabetes, and obesity. Numerous vitamins can also be found in corn, including B and A vitamins. In fact, according to Health, corn contains 10 times more vitamin A than other grains. Vitamin A protects against cognitive decline and supports the immune system. So, next time you’re looking for a side to add to your BBQ, try some corn!

Elote (Mexican Street Corn)

It’s no surprise that Elote has become a fan favorite worldwide, and we are loving this version from the Modern Proper. Charred on the grill then slathered in creamy chipotle mayo, lime juice, and cilantro, this side dish is a no brainer to amp up your meal!

Chilled Coconut Corn Soup

We’re always on board with a cold summer dish to beat the heat and this one from Epicurious is a total game changer (hands up emoji). Sweet corn combined with creamy coconut, potato, and zesty lime make for a flavor explosion that’s guaranteed to blow your mind and your taste buds!

Corn and Zucchini Salad with Feta

If you’re looking for a boost in your salad routine, this recipe is for you! This refreshing, herby dish checks all the boxes with sweet corn, fresh zucchini, and basil, topped with savory feta cheese.

Chicken Tinga with Fire Roasted Corn

And hey, if you’re more about soaking up those rays this summer than manning the grill, you know we’ve got you covered with a fan-favorite, Chicken Tinga with Fire-Roasted Corn. Deliciously cheesy, fire-roasted corn paired with smoky, spiced chicken tinga always hits the spot and is ready in a snap!
