Snap Kitchen’s Grain-Free Blondie Recipe
Makes 24 servings | gluten-free, vegetarian, milk-free
Ingredients
- 8 oz coconut oil (1 cup)
- 12.6 oz coconut sugar (~1.5 cups)
- 4 eggs
- .1 oz vanilla paste (1 teaspoon)
- .2 oz kosher salt (1 teaspoon)
- 14.4 oz almond flour (2 cups)
- .3 oz baking powder or 2 ½ teaspoons
- 10 oz chocolate chips (we use Enjoy Life Semi-Sweet Mega Chunks)
Instructions
- Preheat oven to 350 degrees
- Mix coconut sugar, eggs and vanilla paste
- Incorporate melted (not hot) coconut oil
- Mix salt, almond flour and baking powder together
- Add dry mix to egg & sugar mixture
- Top with chocolate chips and bake in a regular half sheet pan (12.5 x 17.5) for 25-30 minutes

Hi Snap, thanks for sharing this recipe! After reviewing the recipe it seems to be missing the amount of eggs to use in the ingredients. If you view the instructions it says “ Mix coconut sugar, eggs and vanilla paste.” Please advise.
Lastly, what is the difference in the recipe to make the brownies instead of the Blondies?
Hi there! The eggs are listed in the recipe – you can find them below the coconut sugar. 4 eggs total. The blondie and brownie recipe are two different recipes, so you wouldn’t be able to make them based on this blondie recipe. The brownies use additional flours and additional chocolate.
