Blue Cheese? Yes, Please!

Legend goes that blue cheese was discovered when a young man abandoned his bread and ewe’s milk cheese to follow a beautiful girl in the distance. When he returned, mold had transformed his cheese into a magnificent Roquefort (a type of blue cheese). Because of this discovery, buffalo wings, salads, dips, and sandwiches have been changed—for good. The magic of a blue cheese dip recipe is all in the sauce.

The Blue Cheese Process

Blue cheeses—such as Roquefort, gorgonzola, and stilton—are made by fermenting milk and yogurt with added cultures to give them maximum flavor. It’s those added cultures, like buttermilk culture, calcium chloride or Penicillium roqueforti that can make a crumble of blue cheese the perfect addition to a salad or steak.

Traditionally served with buffalo wings, blue cheese pairs well with spicy foods, cutting the heat with its creaminess. It’s also versatile—pair it with your burger, grilled chicken or veggies. 

With a bold and salty flavor, homemade blue cheese sauces and dressings add a special punch to a variety of dishes. Blue Cheese Dipping Sauce for Salads

Creamy Blue Cheese Sauce

Mix together:

  • 1/4 C organic blue cheese
  • 1/2 C full-fat Greek yogurt or full-fat sour cream
  • 2 Tbsp lemon juice
  • 2 tsp chopped green onion
  • 1/2 tsp organic apple cider vinegar
  • 1/4 tsp ground black pepper

Use it as a dip for crudité, buffalo cauliflower bites, or if you’re a traditionalist, chicken wings. Spread it on a simple sandwich to add major flavor & creaminess. Drizzle over a green salad to level up your desk lunch.
