How Do You Prep an Easy Keto Lunch?

Following a ketogenic diet has some serious benefits, but as with any specialty diet, it can also be hard to find foods that work with your plan. This means it’s often upon you to become a keto meal prep master. Seriously, there should be an official prize for this.

And especially if you’re hard at work during the week, what to eat for lunch can become one of life’s great questions. And if you’re anything like me, that may eventually mean you just skip lunch altogether in favor of powering through a few more hours of work. But there’s a better way! If you’re looking for some tips to uplevel your own keto lunch meal prep game, you’ve come to the right place. 

What does a balanced keto lunch look like?

The ideal keto lunch is filled with non-starchy veggies, high-quality protein, and healthy fats. That’s it! When it comes to following the keto diet, the most important thing is limiting your carb intake. For most people, that will look like between 20-50 grams of carbs per day. You’ll be surprised how many veggies this allows, otherwise you’ll mostly be eating protein and healthy fats (here’s some more info on what goes into a healthy keto diet for the curious).

How do I prep keto lunches for the week?

You have many options. But here are our two favorites: 

  1. The first is to prepare a few different types of protein and a few different types of veggies to mix-and-match throughout the week. With this approach, you can get variety throughout the week. You can add a bit of extra healthy fats to your veggies or to your plate before eating. Options include extra virgin olive oil, avocado oil, coconut oil, grass-fed butter or ghee, olives, avocado, nuts and seeds, and coconut.
  2. Another option is to make some delicious recipes to have on hand that are easy to heat-and-eat when you’re hungry but short on time. You can also have a few go-to easy recipes that you can make on the fly during the week. One of my favorite options for this purpose is Danielle Walker’s Lettuce Wrap Sub Sandwiches. So easy, and super nourishing and delicious.
