Our morning food choices are so important. They can mean the difference between feeling satisfied until lunch or dealing with sugar cravings throughout the day. Today, we’re sharing a variation of our customer favorite banana pancakes recipe to help you get your day started in a balanced way.
Thanks to white sugar and flour, traditional pancakes tend to be high in carbs and sugar, which isn’t exactly the best breakfast combination. Gluten-free pancakes (bonus points for grain-free!), on the other hand, are often lower in carbs and higher in fat and protein, meaning a more filling + balanced start to your day. I love this banana pancakes recipe because not only is it super easy, but it’s way more filling and nourishing than your standard pancakes.
Banana Pancakes Recipe
- 2 ripe bananas
- 2 large eggs
- 1.5 tbsp maple syrup
- 1 tbsp almond butter
- 1.5 tsp vanilla extract
- 3/4 tsp lemon juice
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp nutmeg
- With a fork or electric mixer, combine the ripe bananas and the eggs.
- Stir in the remaining ingredients until well combined.
- Grease a skillet with coconut oil or butter and set to medium heat. Pour batter into the skillet, using approximately 1/4 cup of batter for each pancake.
- Let pancakes cook until the first side is golden brown, then flip. Finish cooking on the other side for 1-2 mins.
- Eat as is or serve with your desired toppings! My favorites include nut butter, berries + coconut whipped cream, or a pat of butter + maple syrup. Enjoy!
