New Monthly Dishes: June Lineup

New monthly dishes… say whattt?

Guys, we’re totally giving this a go and releasing new dishes *monthly* this summer. 👏🏽👏🏾👏🏼  Yep, you read that right – we’re doing away with our quarterly/seasonal menu launches and serving up new meals and snacks every few weeks. Here’s a look into Chef Matt Reinhart’s inspiration behind the meals launching this month. Our takeaway: they’re a blast from the past with new takes on old faves; a tribute to the OG Snappers (#ily).

 

Chimichurri Chicken

(Paleo, Whole30, Milk-free, Gluten-free)

This is an old school Snap recipe that was a customer favorite. We made some changes to improve overall flavor and make it more seasonal. Yellow squash and tomatoes are two of our favorite summer veggies. We lightly roast baby tomatoes with a little extra virgin olive oil and garlic to bring out the sweetness and mix them with roasted yellow squash and spinach to form the base of the dish. The majority of the flavor comes from the chimichurri sauce, which we tweaked slightly to create a great balance of acidity, spice, and fresh, bright flavors from the parsley and cilantro. Talk about the ultimate summer fiesta for your taste buds. 💃🏽

 

Crunchy Coconut Shrimp

(Pescatarian, Milk-free, Gluten-free)

Also another past-favorite, with a revamped setup. We still use our coconut brown rice as the base of this shrimp dish, but it’s  livened up with the addition of red and green cabbage, fresh mint and green onions. The additional veggies and herbs add an extra layer of crunch and flavor. To add yet another dimension to the dish, we developed a mango lime salsa that pairs beautifully with the coconut shrimp, making this meal so much fun to eat… There’s just something about being able to dip, ya know? 😏

 

Veggies & Ranch

(Paleo, Vegan, Whole30, Milk-free, Gluten-free)

Speaking of dips… While we have slew of new third party snacks hitting shops this June, we’re stoked to also launch our own mini crudité snack pack. Our homemade paleo ranch dressing serves as THE perfect vehicle for carrots and celery. 🥕✨🥒 Major upgrade to the old bags of carrots & celery, huh?
