Spring is here! Fresh produce and beautiful weather make spring our favorite time of the year. These healthy spring meals highlight fresh fruits and vegetables in season, such as kale, beets, green onions, and lemons. For produce at its peak, shop the local farmers’ market or grow fruits and vegetables in your garden. We’ve harvested fruits and veggies from local Austin farms!

Malaysian Vegetable Curry

Malaysian Vegetable Curry

This vegan lunch option replacing the Thai Green Curry features a house-made curry paste with fresh turmeric, garlic, ginger, and lemongrass for amazing flavor and plenty of antioxidants. Eggplant and mushrooms add a meaty texture and organic red lentils boost the protein. Served over sesame brown rice. This dish is Gluten Free, Non Dairy, and Vegan.

 

Chicken & Green Chile Enchiladas

Chicken & Green Chile “Enchiladas”

Our Snappier version of enchiladas features a homemade Paleo tortilla (made with organic coconut flour, egg, and unsweetened almond milk) wrapped around a creamy chicken filling and topped with a roasted poblano sauce, and pickled red onions. Three enchiladas are Non Dairy, deliciously Paleo, Carb Conscious, and Gluten Free.

Cumin Scented Grilled Kale, Brown Spanish Rice, Black Beans, Toasted Pumpkin Seeds, Roasted Sweet Potatoes. Plant Powered, Vegan, Gluten Free and, Vegetarian meals.

 

Provencal Flatbread, Snap Kitchen

Provencal Flatbread 

Our new pizza crust is more like a decadent piece of “real” pizza, using cheese and eggs in the crust and cauliflower instead of gluten-containing white flour. This crispy crust is topped with our veggie-packed Zucchini Basil Babaghanouj and the filling from our Tomato Tart. Plant Powered, Carb Conscious, and Gluten Free.

 

Smoked Salmon Snack, Snap Kitchen

House Smoked Salmon Snack

A standout and highly addictive Paleo snack with mesquite smoked Scottish salmon. The vegan “alfredo” sauce acts as mayo, and celery and red onion add a satisfying crunch. Carb Conscious, Sodium Conscious, Non Dairy, Gluten Free, and Paleo.
