Making The Feel-Good Taco

There’s a new taco on the scene. A gluten free, paleo, and dairy free slow roasted brisket taco to be exact. After months of recipe testing, we landed on the absolutely perfect combination of good flavor and good-for-you. So much of what makes this unique taco crave-worthy and dietitian approved are the premium ingredients sourced from two of our brand new partners: Siete Family Foods and Aspen Ridge Premium Beef. Siete Family Foods

Siete Family Foods began after founder Veronica Garza improved her multiple autoimmune conditions through a low-inflammation, grain-free diet. As a Mexican-American family from South Texas, the Garzas sought to create a grain-free tortilla that was a satisfying and feel-good replacement for the usual flour or corn variety. We originally fell in love with the Siete products years ago and cheered from the sidelines as our fellow Texas-based company grew. Siete Family Foods now offers two varieties of their paleo-friendly tortillas – almond flour and yuca & coconut flour.

We reached for the yuca tortillas. Yuca, otherwise known as cassava, is a tuberous starchy root (like potatoes or yams) native to Brazil and other tropical areas of the Americas. As a tuberous root vegetable, cassava is gluten free, grain free, and nut free, as well as paleo friendly.

Aspen Ridge

Aspen Ridge has raised the bar and challenged the status quo on all things beef. They’re the best of the best, and truly care for and value each of their cattle. We’re proud of this partnership, and the feel-good vibes that come along with it. We have Aspen Ridge to thank for the flawless cuts of brisket that are used in our new tacos and brisket hash.

This Colorado-based company partners with family owned cattle ranches that provide an environment where cattle are pasture-raised, allowing them to mature naturally. Plus, all animal handling practices are third party validated, resulting in all Aspen Ridge products carrying the Certified Humane designation. It requires that all animals have ample space, access to food, water, and shelter and are handled gently to minimize stress. Additionally, the Aspen Ridge cattle are never exposed to antibiotics, supplemental hormones or growth promotants, or any animal by-products.

The Feel-Good Taco

We’re calling this The Feel-Good Taco because, aside from making you feel great after you eat it, it’s a taco that gives back to your local community. Pick up a taco meal on any Tuesday in June or July and $1 from your purchase will be donated to a local charity in your city!
