The colder winter months have inspired us to create meals that warm from the inside out– think beef stews, hearty plant powered bowls, creamy soups, and more. This seasonal menu rotation marks the return of some old favorites like the Caesar Kale Snack and Mayan Beef dinner. And leave it to Chef Matt to create healthy and craveable versions of some go-to comfort dishes — Chicken Sausage Breakfast Tacos, and an Over-Easy Bison Burger.
“One big part of my inspiration for the winter menu change is a focus on hearty, earthy flavors that match well with colder weather. From the maple in the new oatmeal, the lentils in the Siam bowl, root veggies in the Burgundy Beef, to the sweet potato “fries” that go with the Over-Easy Bison Burger.” – Executive Chef Matt Reinhart.
Here’s more of what you have to look forward to at Snap Kitchen this season.
5 Craveable, Comforting Winter Meals
Chicken Sausage Breakfast Tacos
We’ve taken everyone’s favorite indulgent Tex Mex breakfast and transformed it into a protein-packed breakfast that’s sure to keep you satisfied and energized until lunch! Enjoy two of our Paleo tortillas stuffed with chicken sausage, scrambled eggs, tomato, and green onion. A drizzle of our creamy avocado salsa adds a rich, tangy flavor.
Ginger Glazed Scottish Salmon
This meal is full of perfectly balanced bites–rich and savory grilled salmon, fresh and garlicky sautéed green beans, sweet and creamy mashed kabocha squash. Please your body along with your taste buds, as this dinner offers a healthy dose of omega-3s, and vitamins A, C, K, and D.
Over-Easy Bison Burger
Our version of a burger without the bun. This season, we’ve given the classic American burger a much needed makeover. We start with a bunless, grass-fed bison patty, a naturally leaner alternative to ground beef, but with all of the same beefy flavor. Top that off with an egg “fried” over easy, add a side of spiced sweet potato fries, and you’ve got a full hamburger combo meal, without the associated guilt!
Siam Lentil Bowl
We are so excited to add another vegan entree to our repertoire. This Plant Powered lunch is as colorful and full of flavor as it is nutrient dense. A lightly sweetened bed of spinach and kale serves as a base for hearty red lentils and quinoa, drizzled with a Thai-inspired cashew pesto. Finish it off with a squeeze of lime and a sprinkle of crunchy toasted almonds, and you have a completely plant-based dish that will have carnivores asking for a bite.
Spicy Coconut Chicken Soup
Give a warm welcome to the newest soup in Snap Kitchen’s rotation. Our Spicy Coconut Chicken Soup is a lightened up version of the classic Thai tom kha gai, a sweet and sour chicken soup with a creamy, coconut milk base. Our homemade chicken stock maintains all of the exotic tastes of the traditional dish–turmeric, ginger, lemongrass, garlic, and cilantro. In addition to the distinctly eastern flavors offered by these herbs, we also love them for their anti-inflammatory and antioxidant effects. The addition of coconut milk means lots of healthy fat, so you can count on our Spicy Coconut Chicken Soup to be a wholly satisfying meal or snack.
